How to make Apple Cinnamon Risotto

Sweet, warm and comforting! This risotto is a perfect breakfast and will perk you right up if the weather is gloomy outside. The use of a slow cooker in this recipe makes this risotto easy to ignore while it cooks. ————————————————————————- Recipe: 4 cups diced Granny Smith apples 4 Tbs butter 1½ tsp cinnamon ¼ tsp ground allspice ¼ tsp salt ½ cup packed dark brown sugar 4 cups apple juice 1 tsp vanilla extract 1½ cups Arborio rice To begin you will want to start warm up a skillet over medium heat. While the skillet is warming, dice up the apples. Once the skillet is heated, add the butter and allow it to melt. Add the apples as well as the cinnamon, allspice and salt to the skillet. Let them cook for about 3 to 5 minutes until the apples begin to just release their juices. While they cook, coat your slow cooker with non-stick spray. Once the apples are ready you can add the apples to the slow cooker. Add the brown sugar, apple juice, vanilla extract and Arborio rice. Place the lid over the slow cooker, set the temperature to high and let the risotto cook for 1½ to 2 hours. The risotto will be done when all the liquid is absorbed. When it is ready, serve is up.
