    I’ve never done whole chicken in the crockpot before. This looks great, can’t wait to try it. I’ve got one in the freezer right now.

    I don’t tend to use up my celery in time, either. So I cut the celery stalks into a few pieces each while it’s still fresh and crispy, and then I toss them into some freezer bags and then into the freezer to use later in cooked recipes. I wouldn’t use it for salads or anything, though, as the texture changes upon thawing.

    This is very similar to the way I do my slow roast chicken. One difference I do which adds one more layer of flavor is brown the whole chicken on each side , then brown the vegetables for less than 2 minutes before putting into the pot. The browning takes less than 5 minutes total and the extra flavor to the final broth and chicken is amazing. Thanks for your video btw!!
