I need low fat – low cal slow cooker recipes.

Does anyone have any simple, but low fat slow cooker recipes? And please dont just find a recipe online and post it here. I am capable of looking up recipes myself but nothing I found sounded good… or very easy.

  1. I think we need more detail on what you DON’T want… I’ve got several slow-cooker recipes but I’m not sure what you call simple… I typically use lots of spices/herbs/seasonings, and some people find that to be too much work.

    The above recipe sounds good… but don’t use Diet Coke. The Nutrasweet in it breaks down when you heat it, so you will wind up with something that reminds you of Nuclear Chicken… chemical and weird. (Personal experience. Don’t ask.)

    A good easy marinade for salmon, chicken, or pork tenderloin is equal parts honey and soy sauce, with a few halved cloves of garlic thrown in. You can slow-cook this (but be careful with the salmon as it cooks quickly).

  2. try this , there is only 3 things in it, use any bbq sauce you want, but i have not tried diet coke, but that would be less calories.

    INGREDIENTS:
    Chicken (boneless, skinless breasts or pieces)
    1 cup BBQ sauce
    1 cup coke
    PREPARATION:
    Place chicken in the pot and add one cup of your favorite bbq sauce and 1 cup of coke (plain old Coca-Cola). Cook on low for 8 to 10 hours. The carbonation in the coke tenderizes the meat. I also use this combination with butterfly pork chops.

  3. This recipe was in my recipe drawer. I might have gotten it from the internet, but currently it’s printed on typing paper in my kitchen. It’s really easy to make, I guarantee. Try it with brown rice. If you like more kick, add more pepper. Enjoy!!

    Chicken curry
    1 onion, thinly sliced
    3 cloves garlic, minced
    1 Tbsp. grated fresh gingeroot
    2" cinnamon stick
    1 Tbsp. curry powder
    1/2 tsp. crushed red pepper flakes
    3-1/2 lb. chicken, cut up
    1/2 cup low sodium chicken broth
    2 Tbsp. cornstarch
    2 Tbsp. cold water
    1/4 cup chopped cilantro leaves
    1/2 cup sliced green onions
    1/2 cup mango chutney
    1/2 cup chopped peanuts
    1/2 cup chopped coconut
    Preparation:
    Combine the onion, garlic, ginger root, cinnamon, curry powder, and red pepper flakes in 3-4 quart crockpot. Rinse chicken pieces and pat dry with paper towels. Arrange on top of onions and spices in crockpot. Pour chicken broth over all.
    Cover slow cooker and cook on low for 7-8 hours. Remove chicken and keep warm in low oven, covered. Skim fat from crockpot. Combine cornstarch and water in a small bowl. Stir into juices remaining in crockpot. Increase heat to high and cook, uncovered, for 15-20 minutes or until sauce is thickened. Serve chicken with sauce and chutney. Sprinkle with cilantro and green onions to serve, and serve with peanuts, and coconut.

    I make this recipe quite a bit. I buy boneless pork (ribs, roast or loin), add 1 or 2 cups of water (depends on how much pork you have), one package of dry onion soup and one envelope (two if if you use two cups of water) of Goya seasonings (it’s the one in the orange box). I cook it on medium for a few hours, until the meat is almost falling apart. Then turn to low/warm for another hour. I will usually use some of the juice to make rice on the side or I will add a bag (boil in bag) right to the slow cooker for the last hour. I love this recipe has a nice flavor.
